Falafel
(Make 30 - 35 balls)
Ingredients:
- 2 cup dried fava beans or chick peas
- 1 medium onion - chopped finely
- 2 cloves garlic - crushed
- 1 tsp. baking soda
- 1 tsp. coriander
- ½ tsp cumin
- 1 egg - beaten
- ½ cup parsley - finely chopped
- ¼ tsp cayenne pepper
- Salt
- Pepper
- Flour
- Oil
Preparation:
1. Soak the dried beans or chickpeas in water overnight.
2. Drain. (If you use fava beans that are not skinless, remove the skins now.)
3. Mash the beans or peas into a fine paste in a blender.
4. Add the onion, parsley, egg, garlic, coriander, cumin, cayenne, baking soda,
salt, and pepper. Mix well in the blender.
5. Let the mixture stand for ½
hour in the refrigerator.
6. Shape into small balls (1 inch).
7. Dust with flour.
8. Heat oil in a deep pan or use a deep fryer.
9. Cook a few balls at a time.
10. Turn them until they are crisp and golden brown (aprox. 5 min).
11. Drain on paper towels.
Serve while hot with Tahini or wrapped inside pita
bread with sauce and lettuce.
